Avakkai Pickle

Ingredients

Raw Mango(Avakkai Manga) -  5 portions cut
Mustard Powder - 1 portion heaped
Chilli powder - 1 portion heaped
Rock Salt - 1 level portion roasted and powdered
Fenugreek Seeds - 1 1/2 tbsp
Chick Peas - 1 handful
Sesame Oil - Approx 2 cups

Procedure

1. Mix all the powders, fenugreek and chick peas.
2. Add the cut mango pieces
3. Add the sesame oil till the mix comes together.
4. Put it in a jadi / vessel and close with a dry cloth
5. On the third day from making the pickle, open, check taste and check if oil is floating on the top.
6. If not add enough so that the oil floats on top.
7. You could add powdered asafoatida and chopped garlic pieces if you prefer garlic avakkai.
8. Close and store.
9. Never handle any pickle with wet hands. Always use a dry spoon. A wooden spoon is best for pickles.
