Coconut Rice



Preparation Time : 15 minutes
Cooking Time : 25 minutes
Servings : 2

Ingredients

Grated Coconut - 1 Cup
Salt - To Taste
Cooked Rice - 1 Cup
Green chilli - 2
Curry Leaves - 1 teaspoon chopped

For Seasoning

Cocunut oil - 2 tablespoon
Mustard seeds - 1 teaspoon
Urad dhal - 1 tablespoon
Hing - 1/2 teaspoon

Procedure

1.      Cook the rice and allow it to cool.
2.   Chop green chillies and curry leaves and keep it aside.    
3.      Pour 1 tablespoon oil in the pan and add the grated coconut and fry till golden brown in color and keep aside.   
4.      Pour the remaining coconut oil in the pan.  
5.      Add the mustard, when it splutters, add the urad dal to the pan and fry until it becomes golden brown.  
6.      Add the chopped green chilles and curry leaves and fry for a while.
7.   Finally add the hing.  
8.      Add the cooked rice to the pan and mix it with the grated fried coconut   
9.   Add salt to your taste and mix it thoroughly.
