Cream of Spinach Soup



Cream of Spinach Soup is loaded with the goodness of spinach. Spinach is low in saturated fat, and very low in Cholesterol. It is an excellent source of Niacin, Zinc, dietary Fiber, Protein, Vitamin A, Vitamin C, Vitamin E, Vitamin K, Thiamin, Riboflavin, Vitamin B6, Folate, Calcium, Iron, Magnesium, Phosphorus, Potassium, Copper and Manganese.

Normally a food loaded with so much goodness is not liked for its taste as the saying goes "Anything good and healthy is not tasty". Here's how you can make it absolutely delicious. My daughter loves this soup so much and wouldn't mind having it everyday. In fact, soups and salads are her favourites.

Now going to the recipe, the taste of spinach is enhanced by adding a little of onion and garlic. This brings out all the subtle flavours.



Preparation Time : 15  minutes
Cooking Time : 20 minutes
Servings : 3 small bowls

Ingredients

Spinach / Palak - 1 bunch
Butter - 1 tbsp
Garlic - 2 cloves
Onion - 1 small
Oregano - 1/4 tsp
Peppercorns - 6-7
Milk - 1/2 cup 
Salt - to taste  
Water - 1/2 cup

Procedure

1. Trim the stems and wash the spinach leaves thoroughly
2. Boil water in a vessel big enough to hold the spinach leaves.
3. Once it boils, switch off and drop the spinach leaves in the boiling water.
4. Keep it closed for two minutes. Then drain over another vessel and rinse with cold water
5. Let it cool completely.
6. Meanwhile, roughly chop the garlic cloves and slice the onions.
7. In a kadai / pan, add a blob of butter / olive oil.
8. Once it heats up, add the peppercorns, garlic and onions and saute till the onions turn translucent
9. Let it cool.
10. Puree the spinach with the onion mixture and oregano and add 1/2 cup of the drained water 
11. Pour into the pan and heat on a medium flame. 
12. Add the milk and stir till the consistency is smooth. 
13. Check for salt and add more if required. Spinach takes in salt easily so go easy on this.
14. Finally while serving, top with a dash of fresh cream if required.
15. Serve hot with garlic bread / bread sticks.

The soup was so yummy. My son usually takes more time to eat curries made of spinach. He loved this soup. The recipe was so simple that it took me only some 15 mins totally. I added small chunks of boiled egg (white portion alone) finally to make it more healthy for him ;-)!!
