Enna Mangai Pickle

Ingredients

Raw Mango - 15 nos
Salt - 3/4 cup
Chilli powder -  3/4 cup
Sesame oil - 1/2 cup
Fenugreek powder - 1 tsp
Mustard - 1 tsp
Asafoetida - 1 tsp
Turmeric powder - 1/2 tsp
Sesame Oil - 4 tbsp


Procedure

1. Cut the raw mango into big 1 inch pieces
2. Add salt,  shake it well and keep it closed for 3 days. Shake it well everyday.
3. On the fourth day it would have given out water.
4. Take out only the mango pieces and sun dry them
5. After they dry, put them in the water and keep.
6. Next day again keep only the mango pieces for drying.
7. Now boil the rest of the raw mango water, when it boils add the dried mango pieces to this.
8. Switch off the flame.
9. Add chilli powder, turmeric powder, fenugreek powder.
10. Heat sesame oil add the mustard seeds, asafoetida. Add it to the mangoes, mix well and use.
