Roasted brinjal gotsu has a brilliant flavour that is due to roasting the brinjal on an open flame. One must taste it to experience this taste and what I mean.

Ingredients
Brinjal - 1 big
Brinjal - 1 big
Tamarind extract—1/2 cup
Salt - to taste
Sambar powder - 1 tsp

For seasoning
Oil - 2 tbsp
Mustard—1/2 tsp
Red Chillies - 1
Green Chillies - 1
Hing - 1/2 tsp
Curry leaves - a few
Procedure
1. Roast the brinjal over an open flame, cool, peel the brinjal and remove the pulp.
2. Heat oil in a kadai, add the seasoning.
3. Add the tamarind extract, salt, sambar powder and let it boil till the raw smell of tamarind goes.
4. Add the brinjal pulp and boil for 2 more minutes.
5. Gotsu is ready to serve.
