Koshimbir - Maharashtra

There aren't many people who don't like cucumbers. However, have you ever tried spicing it up in a very unique way. This I believe is one way of having cucumbers in Maharashtra. How could you spice up a boring cucumber salad ?

Preparation Time : 20 minutes
Cooking Time : 10 minutes
Serves : 2

Ingredients

Cucumber - 4 chopped into small cubes (1/4 inch cubes)
Peanuts - 1/2 cup
Coconut - 2 tbsp grated
Chilli powder - 1/2 tsp
Salt - To taste
Mustard  - 1/2 tsp
Asafoetida - 1/2 tsp
Coriander - chopped finely
Lemon juice - 2 tbsp
Green Chillies - 1 chopped finely
Sugar - 1/2 tsp

Procedure

1. Coarsely grind the peanuts or crush them in a mortar
2. In a bowl, combine the peanuts, cucumbers, green chillies, coconut, lemon juice, salt and sugar
3. Heat oil in a small pan and when hot, add the asafoetida, followed by the mustard.
4. When the mustard pops, add the red chilli powder and immediately pour in the bowl.
5. Mix well and serve.
