Papdi Chat

Papdi Chat is a crispy delectable chat served with boiled potato, onions, chat chutneys and lots of sev.
I have fond memories of having this snack in Hyderabad. One chat guy used to carry a bamboo stand and sell this in our apartment. My brother and myself would go down to have this snack. I still remember the taste of this snack that I relished. =P~

You could make the papdi's and store and even have them with tea. This is such a perfect combination.





Preparation Time : 30 minutes
Cooking Time : 15 minutes ( excluding papdi making). Making the papdi's would take about 30 minutes

Ingredients

For Papdi

Maida / All purpose flour - 1 cup
Water - As required
Ajwain / Kalonji - 2 tsp
Ghee - 2 tbsp
Salt - to taste

For assembling the chat

Boiled potato - 1
Onion - 1 chopped finely
Coriander - 1/4 cup chopped finely
Sev - to top
Salt - to taste
Chilli powder - to taste
Black Salt - to taste
Sweet chat chutney
Spicy Green Chutney


Procedure

1. Mix all the ingredients for the papdi and make into a smooth dough.
2. Let it rest for 10 minutes
3. Roll the dough into a huge chapati.
4. Poke it with a fork all over.
5. Use a cookie cutter / a bottle lid to make papdi's of desired size
6. Heat oil in a kadai and fry the papdis in batches.
7. Repeat the process with the dough that remains at each stage.
8. Store them in an airtight container
9. Proceed to make papdi chat.
10. Chop the boiled potato into small cubes. Mix in the chopped onions and the dry powders.
11. Place about 6 papdis on a plate.
12. Put a spoon of the potato mix on each of the papdi
13. Top them with the chutneys to suit your taste
14. Finish off with the sev and coriander.
15. Serve immediately and enjoy this famous street snack
