Vada Pav

Vada Pav (or) poor man's food has become more than a poor man's food. Everyone had started loving this street food so much that you can see it in every chat bhandar, roadside and platform shops in Mumbai. It has become available all over India and abroad too. The best vada pav's are available at Karjat Railway station. You could make the chutneys ahead and store them and make the vada fresh. It is best served hot with lahsun / garlic chutney and roasted green chillies.

Servings : 8

Ingredients

Potato - 3 medium
Green Chillies - 2
Garlic - 2 cloves
Ginger - 1 inch piece chopped finely
Curry leaves - 5 -6 cut
Mustard - 1/2 tsp
Turmeric powder - 1/2 tsp

For the other cover of the vada

Besan flour - 1/2 cup
Water - as required
Chilli powder - 1/2 tsp
Salt - to taste
Oil - for frying

For serving

Pav - 8
Vadas
Roasted Chillies

Procedure

1. Boil the potatoes and mash them well. 
2.  In a pan, heat 1 tbsp oil.
3. When the oil is hot, add the mustard, curry leaves, ginger, garlic and turmeric powder
4. After sauteing it for a minute, add the green chillies and the mashed potato.
5. Add salt to suit your taste.
6. Let the mixture cool completely and then make it into balls
7. Prepare batter with the besan flour, chilli powder, salt and water to a consistency to coat the potato balls.
8. Heat oil in  the frying pan, dip each potato ball, coat with the besan batter completely and drop into hot oil.
9. Fry all the potato balls 
10. Heat a tava and toast the pav, spread the chutneys on the inner side of the pav, place a vada inside and serve hot with roasted green chillies.

Note: In a small pan, add a tbsp of oil and add three to four whole green chillies and fry them well till they turn slightly white in colour.
