Appam



Appam is a preparation made for krishna Jayanti. It is believed that Lord Krishna loves milk and milk products. So any dish made with ghee, butter, curd was believed to be his favourite.This delicacy is made by grinding soaked rice and fermenting it to yield soft and fluffy appams.
 
Preparation Time : 45 minutes
Cooking Time : 20 minutes
Serves : 25 - 30
 
Ingredients 

Raw rice – 1 cup
Powdered Jaggery – 1 cup
Ripe banana -1
Coconut – 4 tsp
Powdered Cardamom – 1 tsp
Dried ginger – ½ tsp
Salt – a pinch
Soda – a pinch

Procedure

1. Soak raw rice overnight
2. Next morning, grind it along with the jaggery, banana, coconut, salt and soda till it reaches a  pouring consistency ( similar to dosa batter)
3. Add cardamom powder, dried ginger powder. Mix well
4. Let the batter ferment for about 6 hours.
5. Heat the appam stone and put 2 drops of ghee in all the holes. When the ghee is hot, pour a ladle of batter
    in each hole and reduce to medium flame and cover.
6. When it cooks on one side turn to the other side and cook.
7. Remove and drain on a tissue.
8. If you don’t have the appam stone, you can heat oil and pour a ladle of batter in oil and fry on medium 
    flame. When golden brown, take out and drain.
