Egg Curry

Egg Curry is a very easy side dish for chapatis. When you are pressed for time, this will be one of the easiest to make in about 25 - 30 minutes. The best part is that you wouldn't have to be near the stove while cooking. By the time the eggs boil and the masala gets ready you are done with your other chores. The image is not very satisfactory. :-( . Would have to take a better picture soon.



Preparation Time : 30 minutes
Cooking Time : 20 minutes
Serves : 3

Ingredients

Onions - 4 medium
Garlic - 2 cloves
Tomatoes - 4 medium
Oil - 2 tbsp
Coriander Powder - 2 tsp
Cumin Powder - 2 tsp
Turmeric - 1 tsp
Ginger - 1 tsp
Pepper powder - 3/4 tsp
Salt - to taste
Eggs - 5

Procedure

1. Slice the onions, crush the ginger and garlic, finely chop the tomatoes
2. Heat the oil in a pan, add the onion slices.
3. Fry till golden brown, then add the garlic, ginger and tomatoes.
4. Add the coriander powder, turmeric powder, pepper powder and cumin powder.
5. Add salt and cook on a medium flame for 20 minutes
6. Boil the eggs for 10 minutes
7. Shell them and cut and place them on top of the sauce and heat for 5 - 10 minutes.
