Paruppu Payasam

Paruppu payasam with the grainy texture of the almost cooked dals is a payasam which is prepared only during festivities and is rightly prepared so since it is the best and needs to be offered to God.

Preparation Time : 45 minutes
Cooking Time : 30 miniutes
Serves : 4

Ingredients

Moong dhal - 1/2 cup
Chana dhal - 1/4 cup
Jaggery - 3/4th cup
Coconut - cut into fine bits
Cashew nuts - 6
Ghee
Water - 1 cup
Milk - 1 cup
Cardamom powder - a pinch

Procedure

1. In a kadai, heat ghee and roast both the dhals till they emit a nice aroma
2. Pressure cook this with 3/4th cup water.
3. Roast the cashews and coconut bits in ghee
4. In a kadai add the jaggery and 1/4 cup water and dissolve the jaggery completely
5. Filter it to remove impurities
6. Boil the jaggery for 3—5 minutes on a low flame
7. Add the cooked dals to the jaggery
8. Now add the boiled and cooled milk to it, mix completely and switch off flame
9. Add the roasted cashews, coconut pieces and cardamom.
