Piperade

Preparation Time : 20 minutes
Cooking Time : 10 minutes
Serves : 4

Ingredients

Onion - 1 large chopped
Garlic - 2 cloves crushed
Capsicum - 2 chopped
Tomatoes - 4 chopped
Eggs - 6
Salt - to taste
Pepper - to taste
Olive Oil - 2 tbsp

Procedure

1. Heat olive oil in a pan.
2. Cook the onions and garlic for 2 minutes
3. Add the capsicum and tomatoes and cook for 5 minutes
4. Add beaten eggs to the vegetables and mix them until scrambled lightly
5. Add salt and pepper to taste.
