Rava Kesari is a festive sweet. This is one sweet that is associated with all weddings, festivals and events so bright and cheerful. A very easy to prepare sweet that takes under 30 minutes to prepare. My mom's recipe always gives the best results and we get lovely kesari cakes.
Preparation Time : 30 minutes
Cooking Time : 20 minutes
Serves : 4 - 6 people
Ingredients
Rava – 1 cup
Sugar – 2 cups
Water – 3 cups
Cardamom – 1 tsp
Saffron soaked in warm milk – 3 -4 strands along with a pinch of Kesari powder
Cashew and raisin roasted in ghee – 3 tsp
Procedure
1. Boil three cups of water in a vessel.
2. Meanwhile roast sooji in ghee on a medium flame, till a nice aroma comes.
3. Pour the boiling water in the sooji and mix well and when it is cooking add the sugar
4. Cook till it reaches a thick consistency.
5. Pour the milk with saffron and kesari powder, cardamom and the roasted dry fruits and mix well.
6. Pour on a greased plate and let it cool. Make pieces of the kesari and store in an air tight container.
7. Refrigerate if not consuming immediately.
