Stuffed Cucumber

Preparation Time : 1 hour
Cooking Time : 20 minutes
Serves : 4

Ingredients

Large Eggplant - 2
Almond flakes - 2 tbsp
Garlic - 2 tsp
Shallot / small onion- 1 finely chopped
Parsley - 1 tbsp finely chopped
Salt - to taste
Pepper Powder - to taste
Cucumber - 1 large
Lettuce - 1
Tomatoes - 2

Procedure

1. Roast the eggplant on an open flame.
2. Allow it cool, take the pulp, mix with almonds,onion,  garlic and parsley.
3. Add the salt, pepper and mix well and cool.
4. Chop the cucumber into 1 inch rounds.
5. Scoop out a major portion of the cucumber keeping the base of each cucumber piece intact.
6. Stuff them with the eggplant pulp and serve with tomato slices and lettuce
