Vella Seedai



Vella seedai is one seedai that most people avoid making for fear that it might burst while frying. But it is very easy to make and is like melt in the mouth. Try this recipe.

Preparation Time : 50 minutes
Cooking Time : 30 minutes
Ingredients

Rice flour – 1 cup
Urad dal flour – 2 tsp
Jaggery – 3/4th cup
Sesame seeds – 2 tsp Prepared as in the previous recipe
Grated Coconut – 1 tsp
Oil for frying

Procedure

1. Dry roast rice flour, grated coconut separately and mix sesame seeds, urad dal four.
2. Prepare syrup of jaggery. (Dissolve and heat it a little(till it is just warm))
3. To the dry ingredients add the jaggery little by little and mix till it forms a thick dough. The consistency of 
    the dough is very important.
4. Make marble size balls of the dough and let it rest for 10 minutes.
5. Fry in oil. The temperature of the oil should be just right. (Heat the oil. Test by frying just one ball first. If 
    the ball dissolves, it means the dough is too soft – add a little more rice flour. Make sure it does not turn 
    black. )
6. Take it out while the strong sizzling sound of the oil reduces.

Note: This seedai tends to crack. Don’t worry about the cracks. Alsp make small balls else it might not cook properly inside.
