Oats Cookies

Preparation Time : 10 minutes
Cooking Time : 20 minutes
Serves : Makes 3 dozen cookies



Ingredients

Salted butter - 1 cup, softened
Light Brown sugar - 1 cup packed
Granulated sugar - 1/2 cup
Eggs -1
Vanilla extract - 2 tsp
All-purpose flour - 1 1/4 cups
Baking soda - 1 tsp
All Spice powder - 1 1/2 tsp (Nutmeg, Cardamom,  Dry ginger, cloves, cinnamon)Salt (optional) - 1/2 tsp
Quaker Oats (Quick) - 3 cups
Nuts - 3/4 cup, chopped


Procedure

  1. Preheat oven to 180° C. 
  2. Beat together butter and sugars until creamy. 
  3. Add egg and vanilla extract; beat well. 
  4. Add the flour, baking soda, all spice powder and salt; mix well. 
  5. Slowly stir in the oats and nuts.
  6. Refrigerate the dough for 30 minutes
  7. Drop by rounded tablespoon onto an ungreased cookie sheet. Flatten with a floured fork to 2" diameter.
  8. Bake for 12 - 15 minutes or until golden brown. It will spread to 4" diameter.
  9. Cool for one minute on sheet, remove to wire rack.
