Palak Paneer



Palak Paneer is a dish I love ordering on my occasional trips to a restaurant. This recipe is my version of this brilliant green side dish.

Preparation Time : 10 minutes
Cooking Time : 20 minutes
Serves : 2

Ingredients

Palak - 2 small bunches
Coriander  - 3 tbsp, finely chopped
Onion - 1 small, sliced
Garlic - 5 to 6 cloves chopped finely
Green Chilli - 5 chopped finely
Thick Curd  - 1/2 cup
Paneer - 10 cubes
Coriander Powder - 1 tsp
Turmeric Powder - 1/2 tsp
Salt - to taste
Black salt - a pinch
Oil - 2 tbsp
Cumin - 1 tsp

For serving

Lime juice - 1 tbsp




Procedure

1. Blanch the palak(put it in boiling water for 2 minutes till leaves wilt and refresh in cold water). Drain and set aside.
2. Grind the palak leaves along with the coriander to a fine paste
3. Heat oil in a kadai, add the cumin seeds, once they splutter add the garlic, saute for a minute till they turn slightly brown.
4. Add the green chillies and the onions and continue to cook on a medium flame till the onions turn soft but not brown.
5. Add the curd and the powders and stir well to mix, set on low flame and continue to cook for a minute
6. Add the palak paste and mix well.
7. Finally add the paneer pieces and mix well and let it come to a boil.
8. Switch off and serve hot with a dash of lime and rotis.



Note:

1. Adding lime to palak or any green eases out the digestion.
