Pani Puri

Pani Puri the famous street food is my husband's favourite.I am dividing this recipe into 4 parts. The puri preparation, the chutney preparation, the stuffing preparation, the pani preparation.


For the puri (Makes 50 - 60 puris)

Preparation Time : 10 minutes
Cooking Time : 1 hour



Ingredients

Rava / Sooji - 2 cups 
Maida - 4 to 6 tbsp
Soda - 1/2 tsp
Salt - to taste
Oil - for frying
Water - as required

Procedure

1. Mix the dry ingredients well.
2. Add water little by little and mix well till you get a stiff dough.
3. Keep covered with a wet cloth for 30 minutes
4. After that, make about 10 - 12 medium size balls
5. Roll each ball into a very thin circle and cut out puri size circles using a suitable cookie cutter / lid
6. Do this and make all the puris and keep them covered with a wet cloth till the time you fry.
7. Heat enough oil in a kadai and fry 4 to 5 puris at a time on medium flame.
8. The puris will puff up immediately after dropping in oil.
9. Remove and place on a tissue paper and put them in an airtight box after a few minutes
10. These puris can be used for making pani puri anytime.

For the pani

Preparation Time : 10 minutes

Ingredients

Water - 1 litre
Salt- to taste
Pani Puri masala - 2 tbsp
Lemon juice - 1 tbsp

To grind into a paste

Chillies - 1/2
Mint leaves - 1 cup

Procedure

1. Grind the items given under 'to grind'.
2. Mix it with all the other ingredients and make pani.
3. Chill it well

For the chutney

Make the two chutneys as given in the recipes below

Sweet Chat Chutney
Spicy Green Chat Chutney

For the filling

Preparation Time : 15 minutes
Cooking Time : 25 minutes

Ingredients

Potato - 2 big , boiled and cubed
Dry white peas  - 1 cup, pressure cooked
Turmeric - 1/2 tsp
Chilli powder - 1/2 tsp
Garam masala  - 1/2 tsp
Amchur powder - 1/2 tsp

Salt - to taste
Oil - 2 tbsp
Cumin seeds - 1 tsp

Procedure

1. In a kadai, heat oil, add the cumin seeds
2. After they splutter, add the boiled peas and potato
3. Add the dry powders and salt and continue to cook till it comes together.
4. This is the ragda, to this add a little the pani puri pani and a few broken puris
5. Allow to cool

To make pani puris

1. Make holes in the puri on one side, arrange them in a plate
2. Put in the filling in each puri
3. Add the chutneys and dip them in the pani and serve immediately.
4. You could add some chopped onions and sev if you want

Note :

1. Pani puri tastes best with this ragda as filling is what my husband says. I like it best with plain uncooked moong sprouts and boiled potato filling.

2. You could sugar to the water if you like your pani puri slightly sweet.

3. I normally mix the two chutneys so that it is easy to serve.
