Vegetable Balls

This brilliant dish is a great way to sneak in the goodness of all vegetables you want into kids in a way they will love eating them. Since my daughter eats most vegetables without much fuss, I stick to the normal flavourful chinese vegetables for this. You can always go ahead and experiment and send in a few ideas too. :-)


Ingredients

Green Capsicum  - 1 grated (you can go ahead and add a little of all the colored ones for aesthetic appeal)
Cabbage - 1/4 grated / shredded finely
Carrot - 1 grated
Beans - chopped finely 1/4 cup
Onion - 1 medium grated
Garlic - 2 cloves, chopped finely(Optional)
Salt  - to taste
Chilli powder - to taste ( approx 1 tsp)
Maida - 4 tbsp (might vary)
Cornflour - 4 tbsp (might vary)
Coriander - 1 tbsp, chopped finely(Optional)
Pudina / Mint - 1 tbsp, chopped finely (Optional)
Oil - for frying
Water - as required

Procedure

1. Add all the vegetables to a wide bowl.
2. Add  the salt, chilli powder to taste
3. Add the maida and cornflour and mix together. The water content in the vegetables will help in binding. After mixing well add only the water that is required to hold  the balls together when formed.
4. Heat oil for frying and fry the veg balls till golden brown.
5. Serve hot with ketchup

Note:

1. Since it contains onion and salt, keeping the balls after formed for longer will make them fall apart while frying, so fry them immediately and serve while still hot. It tastes amazing.
2. You can go ahead and add cauliflower, some palak leaves, baby corn, sweet corn etc. the choices are unlimited. :-)
